Gingerbread Cake

Makes 12 nice-sized chunks of gingerbread cake 


3/4 cup Guinness or porter

1/2 baking soda

2/3 cup molasses

1 cup brown sugar

2 eggs, lightly beaten

1/3 cup oil

1 tablespoon grated fresh ginger

1 1/2 cup flour

2 tablespoons dried powdered ginger

1/2 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon ground black pepper


1. grease and flour a 8"x8" baking dish and set the oven to 350

2. simmer the Guinness for a couple of minutes, watching to make sure it doesn't boil over. Remove from stove and add to a mixing bowl with the baking soda -- it will foam up.  

2.  add the molasses and sugar and stir to blend

3. add the eggs, oil, and grated ginger and blend

4.  combine the flour, dried ginger, baking powder, salt, and pepper and stir it into the liquid mixture.

5.  pour into the prepared pan and bake for about 35-45 minutes.  


Note:  This is a very thin batter.  I have added diced crystallized ginger to this, which is nice, but it all sinks to the bottom.
